Salted Caramel Thumbprint Cookie Recipe

What you need for the cookies:
2/3 cup of sugar
3/4 cup of unsalted melted butter
2 tablespoons of bourbon
1/2 teaspoon of vanilla extract
Pinch of salt
1 1/3 cups of flour
1/4 cup of brown sugar

What you need for the caramel:
1 cup of sugar
1/4 cup of melted butter
1/2 cup of heavy whipping cream
1/2 teaspoon of vanilla extract
Pinch of salt

  1. In a medium heavy-bottomed saucepan, heat sugar over medium heat, stirring constantly with a heat-resistant spatula. Cook until sugar forms clumps and melts into a light amber colour liquid. This will take about 4-5 minutes.
  2. One the sugar is melted, add a few pieces of butter at a time, constantly whisking until it is fully mixed.
  3. Slowly add in the cream while whisking constantly. Let it all boil for 1 minute, then remove it from the heat. Transfer the caramel into a glass bowl and add in the vanilla and salt. Let it cool before using.

    *If caramel seems too runny once fully cooled, refrigerate for 15-30 minutes before filling cookies.
